Tropical Shrimp Cevechie

Ingredients- Mise En Place

Shrimp Poached* 1LB

Mango Small Diced 1 Whole

Strawberries Small Diced 4 Lg

Red Onion ½ small

Scallion 1 pc

Cilantro 2 Sprigs

Aji Amarillo* 3Tbsp

Passion Fruit Puree 2oz

Lime Juice Fresh 1oz

Sugar 2 Tbsp

Olive Oil 1 Tbsp

Optional:

Chifles*

Jasmine Rice

Directions:

Whisk together aji amarillo, sugar, lime juice, and passion fruit puree. Dice cooled poached shrimp into  bite size pieces*. Mix together shrimp, mango, strawberries, red onion and the passion fruit concoction. Sprinkle cilantro and scallions on top  and cover,* refrigerate for 30 minutes. Remove from fridge re-mix all the ingredients this time and serve with chifles, or a bowl of steamed jasmine rice.

Notes:

Poached Shrimp- you can poach your shrimp at home or buy store bought cooked shrimp. Personally you can control the texture and flavor of your shrimp if you poach it on your own.

Aji Amarillo- is semi spicy pepper paste used in Peruvian cooking, if you are unable to find this you can substitute your favorite hot sauce and experiment with the right dose or omit it completely.

Chifles- thinly sliced plantain chips, again homemade is better but store bought will do the job.
