Pork Souvlaki

Pork Loin 5lbs

Lemon 1-2

Dried Oregano 2 Tbsp

Paprika 1 Tbsp

Dried Thyme 2 tsp

Red Wine Vinegar 1 fl oz

Extra Virgin Olive Oil 4 fl oz

Garlic Minced 6 cloves

Salt/Pepper

Garnishes

Flat Bread

Cucumbers

Tomato

Olives

Tzatziki

Feta Cheese

Equipment:

Skewers (Metal or Wood*)

Griddle or Grill

Directions:

Begin by dicing your pork loin into bite size chunks, removing some of the fat and silver skin* if applicable. In a large bowl whisk together the zest of 1 lemon, about 3 fl oz of lemon juice(1-2 lemons), oregano, paprika, thyme, red wine vinegar, extra virgin olive oil, and minced garlic. Reserve 2 fl oz of this marinade for basting, pour the remainder of the marinade on your pork chunks and marinate for 3-6hours. Next preheat a griddle or grill, begin to skewer your pork chunks*. Season the the skewers with salt and pepper and place on hot grill, rotate after 2-3mins until fully cooked, roughly 8-10 mins. Serve with flat bread, salad, and tzatziki.

Notes:

Skewers- if using wooden skewers soak in water for at least an hour before use.

Skewering Pork Chunks- use your judgement on how big or small to make your skewers 2to 4oz per skewer is good starting point.
