Honey Roasted Peanut Chicken

Ingredients- Mise En Place

Chicken Breast Cut into Strips 3Lbs

Honey Roasted Peanuts Crushed* 2Cups

Panko 3Cups

Egg 2

Milk 1 Cup

Flour 1Cup

Oil For frying*

Spice Blend

Salt  1 tbsp

Pepper ½ tsp

Cayenne ¼ tsp

Garlic 2 tsp

Onion 1 tsp

Parsley 1 tbsp

Mustard Powder 1 tsp

Directions:

Begin by making the spice blend, divide into 3 parts. Season the chicken strips with ⅓ of the spice blend. Next whisk together the 2 eggs with a cup of milk and half of the ⅓ seasoning, use the other half to season the flour. Mix the remaining seasoning with the crushed honey roasted peanuts, and bread crumbs*. Begin the standard breading procedure chicken to flour- flour to egg wash- egg wash to bread/nut mix. Heat a pan/or pot with oil and bring to 375F, once the oil reaches temperature begin frying the breaded chicken strips about 3-5 mins. Serve hot with your favorite dipping sauce.

Notes:

Crushed Honey Roasted Peanuts- Crush in a food processor or in a ziplock bag with a pan.

Oil for frying - you can either pan fry or deep fry the chicken, it is important to switch your oil between batches as to not let the oil burn up with the bread crumbs that fall off during the cooking process, as well the sugars from the honey roasted peanut.

Peanut/Bread Mixture- I suggest splitting the mixture into as bread crumbs coat proteins best when they are dry and the coating process inevitably will get wet and begin to clump during the process.
